I love this recipe, it’s easy you can make a lot of it, and it’s delicious.

1 Spaghetti Squash
1 Onion (sliced)
1 Green pepper (cored and sliced)
1-2 zuchini, sliced (bite size)
1-2 summer Squash, sliced (bite size)
1-2 cans Diced Tomatoes (I prefer Delmonte)
1 28 oz. can crushed tomatoes (I prefer Pastene)
Mushrooms (optional)
Italian seasonings
salt and pepper
crushed red pepper (optional)
Goat Cheese (optional)

Chicken breast wrapped with Prusciutto and cheese in a sweet pepper

Ingredients:

Chicken 4 oz. raw for each serving
Prusciutto 1-2 slices per serving
Cheese (low fat Allouette garlic herb) 1-2 tablespoons per serving
Peppers (1 per serving) multiple colors if multiple servings
Olive oil (spray)
Chicken broth
Salt and pepper

Pound breasts so they are about ½ inch thick (easy to roll), Salt and pepper them.
Place 1 tbls. Cheese on breast and spread,
Place one slice Prusciutto over cheese, then roll breast up and set aside until all are complete.
Cut top of pepper off and save, clean out pepper without cutting, (leave whole).
Place one portion of chicken in each pepper, place pepper in baking dish. Do this for all portions, place tops back onto each pepper.
(This can be prepared ahead).
Preheat oven to 350 degrees.
Remove top of peppers, use misto with olive oil over peppers
Pour a little chicken broth into each pepper as well as into the bottom of dish.
Place tops back on and bake for 35-45 minutes, until done.

Roasted and Mashed Butternut Squash

4 lbs. Butternut Squash (peeled and cut into large chunks)
Pumpkin Pie spice
salt (to taste)

Preheat oven to 400 degrees
Spray baking dish with non-stick spray
Place squash in dish (one layer)
Sprinkle generously with Pumkin Pie Spice
Sprinkle with salt

Roast squash for about 45 minutes or until softened to mash.
Remove from dish and place in large mixing bowl.
Mash or whip until smooth.
Taste for salt and spices.

This dish can be made a day ahead, reheat in a 350 degree oven.

Salmon or Chicken

6 oz. Salmon per person (raw)
4 oz. Chicken per person (raw)
1 Tablespoon maple syrup (low fat)
2 Tablespoons soy sauce

Mix syrup and soy sauce together, pour over Salmon or Chicken and marinate for 30 minutes. Cook on the George Forman grill or in a non-stick frying pan with no stick spray or misto.
