Vegetable tray

Are you sick of throwing out vegetables because you didn’t have time to wash and cut them.    Are you ready to save time and save money in the long run. 

Instead of throwing out your vegetables, how about ordering a veggie tray from your local grocery store.  Call the day before you do your shopping and order a Vegetable tray with NO dip, tell them you want it after 12:00 the next day.  This usually insures that they wash, clean and cut up the veggies the morning you pick it up. 

When you get that tray home, bag up the veggies into zip lock bags or containers.  Now you have clean, prepared veggies at your finger tips.  They are great  for a stir fry, in a soup, to add to a sauce, to use in  a casserole or to just snack on.
Don’t like something on the tray, make it a special order and only get what you like on the tray. 

You can do this weekly and enjoy clean, freshly cut, tasty vegetables whenever you want.  I love having fresh veggies in the house and you will too.

Any weight loss is a success; don’t tie yourself to a number so tightly that you feel you have failed if you don’t reach “the goal.” There is more to weight loss than just the numbers on the scale.  Pay attention to how you feel, are you in control, breathing easier, more active. Success is not the finish line it is the journey, pay close attention to the changes you are making in your day to day life. All these factors go into your “goal” weight. Base your success on how you feel, not just physically but mentally as well.  The scale and the weight charts are just one measure of your results.

Please keep this in mind about your food choices.   You are a good person no matter what you eat, food does not define you, anymore than your weight does.  Remind yourself of this daily, hourly if you need to.

I am where I am, and that is okay.

“I am where I am, and that is okay.”  I heard this quote on a CD from the book The Astonishing Power of Emotions by Jerry and Esther Hicks.   I was driving and it brought tears to my eyes.  Something so simple, yet so very powerful.  I know that accepting what is in our life is crucial to moving forward, but not blaming ourselves for where we are is pure freedom. 

I think since last week when I heard it, I have been digesting it over and over again.  Letting it really sink into the very core of me.  I repeat it multiple times daily and it is wonderful.  There are no more recriminations about anything.  Any choices that I have made have brought me here, for better or worse, which of course is just my perspective anyway.   But knowing that I can change where I am going by a thought, a choice, an action, well that is freedom.  Acceptance is the start of change, if I am not willing to accept who I am at this given moment how will I ever grow or change. 

My deepest wish for you is to read these words I AM WHERE I AM, AND THAT IS OKAY and start to shift.  To truly accept where you are, for me this is on many levels, not just my weight.  But it is refreshing not to say, if I hadn’t had ???? over the holidays I would be 5 pounds less, etc.  The truth is I am where I am, and that is okay.  I can only change the past by thinking differently of it, so today I choose to accept where I am, as I am and to take actions from this place.  Not from where I wish I was, or where I want to be, but from where I am right now in this moment. 

My goal for myself and for you is not to just get to the “right” weight, my intention for us all is to enjoy the journey.  To accept it all, the highs (weight loss, loose clothes, passing up 2nd’s on your favorite dish) and the lows (weight gain, tight clothes, going for 2nd’s or 3rd’s) and to be okay with it each day, each moment knowing that we are all okay just exactly as we are. 

May 2010 bring you great acceptance and love of yourself, the very best gift you can give and receive.

Always keep trying!

Sunday night, I was watching a cooking challenge show on the Food Network channel.  It was an Ice Cream challenge. 

One of the challengers got distracted and forgot an ingredient, she added it, but much later in the process than planned. 
She was going to serve it with ganache cigars, and a chocolate pudding. 
The ganache was too soft, the pudding didn’t thicken and of course the Ice Cream wasn’t what she had planned. 
She had all the ingredients; it just wasn’t going to look right. 
She quit, dropped out of the challenge, even though the judges wanted her to stay in it, wanted her to submit the foods for the challenge. 

By giving up she showed a huge weakness, that she wasn’t willing to put herself out there.  She wouldn’t try a different presentation, something, anything, to stay in the game. 

It spoke volumes to me and reminded me of my own and many others weight loss journeys.  When it isn’t going just perfect, do you just give up, throw in the towel? 
If you do that, or when you do that, how does it work for you?  What do you get from that? 

For me, I know that I have envisioned how I wanted some party or meal to go and I didn’t follow my original plan.  Instead of quitting, I reevaluate and make different choices throughout the rest of the party or meal. 

If your weight loss journey isn’t going as you planned, reevaluate and revise your plan. 
The path doesn’t always go straight, there are many curves, the key is to accept those curves and adjust your journey. 

You can’t succeed if you quit in the middle of the game.

Vegetables

A simple and often easy choice is vegetables. Especially this time of year, they are fresh from your local farms and usually available at local farm stands.

There is nothing like freshly picked tomatoes, cucumbers, and squash. Fresh corn on the cob is so good grilled, you don’t even need to add butter to it. Cucumbers plain are great, but pour some seasoned rice vinegar over them and let them marinate for a few hours, it makes them delicious!

Tomatoes, well I can’t say enough about tomatoes, sliced up with a little bit of salt, that is all I need. However, for a meal, cut up a few large tomatoes, add 1 teaspoon of olive oil, salt to taste and a bunch of freshly chopped basil. I put this over 2 slices of lowfat/lo-cal bread with an ounce of either low fat or full fat mozzarella. It makes a fantastic lunch and it’s filling.

Are you getting this? EAT YOUR VEGGIES! Vegetables contain vitamins, minerals, fiber and antioxidants to help ward off chronic diseases. Vegetables provide a terrific low calorie, high fiber snack that is packed with nutrients. How do you get in your 5 a day? Share some ideas with me. Keep veggies all around you, they do a body and a mind good.

I make a big pot of ratatouille, I use spaghetti squash, onions, peppers, garlic, zucchini, summer squash, tomatoes and tomato sauce (Pastene). I cook it all together with Italian seasonings (fresh now that I have an herb garden) and it is delicious. It’s great with a meal, as a meal with some protein and as a snack when I am hungry in the middle of the day.

Don’t want to cut up the veggies yourself? Then call your local store and order a veggie tray for tomorrow. You will have fresh, clean, and ready to eat vegetables. They will be great raw or you can use them in a stir fry or throw them on your grill with some spices. Choose Vegetables! Choose healthy!

It is easy to create a weight loss plan that will help you lose weight. However, until you are willing to learn the reasons why you are over weight, losing weight and keeping it off will continue to be difficult. (more…)

Don’t be a stuffed Turkey on Thanksgiving

Thanksgiving is just around the corner. Let’s remember that Thanksgiving is ONE day, Thursday, November 23rd. It is NOT Friday, Saturday and Sunday as well. Plan accordingly!

Think about what you are going to eat before Thanksgiving Day. Start to plan and prepare now so that you will make healthy smart choices. If you know that you are going to over indulge on Thanksgiving start to eat light the week before and continue to eat light for the week after Thanksgiving.
Don’t be afraid to modify some of your favorite holiday recipes for healthier versions. Set up some basic strategies for the day. (more…)

Just around the corner

Thanksgiving is just around the corner, don’t wait until the last minute to take action for your weight loss. Start to plan your holiday splurges now. Choose healthy, low-fat, low calorie foods for the next two weeks, lose a couple of pounds before Thanksgiving day. Think about how you can make your favorite holiday dishes with a bit less fat and calories. Remember that Thanksgiving is not just about food, it is really about the people you spend the day with.

Roasted and mashed butternut squash with pumpkin pie spices, (no sugar and no butter) it’s delicious and it’s loaded with beta-carotene, a great antioxidant. This is one of my favorite dishes, I make it all the time.

Check out the recipes on the site to help you enjoy Thanksgiving without gaining weight.
